Cultivated Cuisine: Meet The Chef

Elkstone Farm plays host to Cultivated Cuisine event, raising the bar for what’s possible in a farm-to-table dinner setting. Elkstone Farm is a truly self-sustaining ranch set among a gorgeous backdrop of orchard fields, rolling hillsides, and down-valley views.

On this special land grows nutritious food meticulously cultivated to nurture Steamboat’s close community. Elkstone Farm works with the soil, harvests its fresh produce, and continually refines what it means to be a steward of the earth.

But these dinners simply couldn’t happen without the vision and culinary expertise of Chef Russell Goodman.

Chef Russell Goodman is the Executive Chef of Elkstone Farm, where he uses local ingredients and produce from the farm to create dishes that reflect the unique culinary identity of the Yampa Valley.  His guiding principles are respect and provenance. 

He has deep respect for the precious things that grow and are raised in this valley, and he carefully considers the provenance of things so that the life cycles of the products he cooks are understood and reflect a healthy ecosystem free of exploitation.
